My name is Ai and I am a qualified pastry chef with over 15 years experience. It all started with my apprenticeship at Jocelyn's Provisions in Brisbane and from there I worked in various places, including Japan to gain as much experience and knowledge as possible. I love creating beautiful and tasty sweets, but I also enjoy trouble shooting cakes, the science behind baking and I am a big time perfectionist.

I became a mum for the first time in 2020. To be able to spend more time with my family, we built a council approved and registered kitchen in my home and created this dream job of mine.

My family, especially my parents were my biggest supporter in helping me realise this dream and therefore I decided to include our name and our family crest in our business name and logo. Our crest represents Ageha-Chō, a Japanese swallow tail butterfly.
